We visited Amsterdam last weekend, where the best cheese shop in town is De Kaaskamer, which happened to be right around the corner from our hotel. We met up with ultra friends Marc and Jenn from Oakland and had a short but fabulous weekend in the canal city. I visited the cheese shop every day, browsed and learned, and ate a lot of Dutch cheese.
I use a lot of different bacteria and molds to make cheese - they come in little packets, like drugs or prescriptions, and don't look like anything you would want to put in your mouth.
