Oszczypek is a salted sheep's milk cheese exclusively made in the Tatra mountains region of Poland. It comes in a variety of ages, and is also available smoked. Agnes got some for me on her recent trip home to Poland.

I took a picture of a cheese stall back then, when I wasn't even making cheese. I love the spindle and corn cob shaped moulds they use, and the cheese is absolutely delicious.
