peelin' out



I made some candied orange peel

Rinds of 5 oranges or lemons, julienned
2½ cups water
1¼ cups sugar

Boil sugar and water into a syrup - add the peel and simmer 1 hour.  The syrup will reduce quite a bit.  Remove from pan and cool/dry on a wire rack for 24 hours.
